I am always on the lookout for easy weeknight dinners that my whole family will love. I have 3 young boys. The oldest is the pickiest and the other two can sometimes be also. I work full-time and usually won’t get home until 6 pm or 6:30 pm after picking up the boys at daycare. (For steps on choosing the best childcare, read my post here.) We try to get the youngest in bed between 7 pm and 7:30 pm and the older two by 8 pm. This doesn’t leave a lot of time for cooking. Therefore, I am always on the lookout for quick meals like my Spaghetti Pie!

Recipe for Spaghetti Pie

Ingredients I use
- 1 lb. Ground Turkey (either Italian seasoned or plan. Usually Jennie-O)
- 1 lb. Spaghetti
- 3/4 cup chopped yellow onion
- 1 large jar of Spaghetti Sauce (usually a tomato basil type like Classico)
- 4 cups of shredded Mozzarella cheese
- 3 eggs
- 1/2 cup shredded parmesan cheese

Step 1
The first step is to boil the water and then add the spaghetti to cook. While the spaghetti is boiling, I start cooking my turkey meat. In order for the turkey not to taste gamey, I sautee onions first and then add the turkey. If it is not already seasoned, this is where I will at least season with salt and pepper. When the turkey is done cooking, I add it to a pot with the sauce to slowly simmer together. Preheat the oven to 300 now also.



Step 2
In a medium-sized mixing bowl, stir together the eggs and parmesan cheese. Once the spaghetti is finished cooking, drain and mix into the bowl with the eggs and parmesan. Make sure to stir it quickly while it is hot so you don’t end up with scrambled eggs.


Step 3
Using a large baking dish, layer the bottom with half of the spaghetti mixture. Then top with half of the mozzarella cheese. Pat it down gently so it evenly fills the bottom. Then repeat with the rest of the spaghetti and another layer of mozzarella.


Step 4
Once both layers are done, gently pat it down so it is even. Bake in the oven for about 10 minutes or until cheese is melted. Take the sauce and pour it over the top. Let it sit for a couple of minutes and then cut into squares and serve. Spaghetti Pie is great with a salad on the side.

Additional tips
If you want, you could easily sneak some veggies in between the layers or even into the sauce. I haven’t tried this with zoodles (zucchini noodles) yet so let me know if you do. A way to prep this ahead of time is to get the onions chopped up. The rest is pretty quick, it just takes some time to bowl the spaghetti noodles. The best part is the leftovers for lunch!
